Protein Berry Muffins

Yum, yum, yum. Who doesn't love a warm muffin straight outta the oven on a sunshiny Saturday morning? Meeeee. Ok, but for real, these muffins make me giddy and happy because they are not only delish but healthy too! They've got healthy fats, healthy carbs and protein!

 

Be sure to serve these muffins warm and with a spoonful of jam or coconut butter if that's you're thing.

Ingredients:

2 scoops vanilla whey or plant based protein powder

1 1/2 cups Kodiak Cakes Organic Oat pancake mix

½ teaspoon baking soda

1 whole egg

⅔ cup milk (can use plant based)

⅓ cup Greek yogurt

¼ cup coconut oil

1 teaspoon honey (or to taste)

½ teaspoon zested lemon peel

1 cup frozen berry mix

 

Recipe:

  1. Heat oven to 350.

  2. Start by spraying a cupcake pan with non-stick spray. Melt coconut oil in medium-sized bowl in microwave until liquid. Add in all ingredients except the berries and stir until incorporated. Fold in berries.

  3. Scoop mixture into cupcake pan, about 3/4 up the sides. Bake for 20-25 minutes or until toothpick comes out clean.
