Brown Rice Porridge

I am probably the biggest rice fan that ever lived. If I had to choose one food to live off the rest of my life it would be rice. My two favorites are forbidden black rice and brown jasmine rice. Both are full of fiber and keep one full ALL day!


Guess what?! This recipe is plant based and dairy-free! Try not to become to addicted to this porridge... It really is amazing. Serve with a side of scrambled eggs or tofu!

1 cup brown jasmine rice (rinsed)

2 cups water

1-1/4 cup coconut milk (not reduced fat version)

2 tablespoons raw cashews (chopped)

3 tablespoons unsweetened coconut flakes

1 tablespoon honey

1 teaspoon vanilla

1/4 teaspoon cinnamon

Pinch of ground cloves 

Pinch of allspice

2/3 cup chopped fruit or berries



1. Place rice and water in a pot and boil on medium heat until rice has fully absorbed water. About 30 minutes.

2. Turn heat on low and add coconut milk. Stir gently for roughly 10 minutes until coconut milk is absorbed.

3. Add in cashews, coconut flakes, honey and spices. Stir until fully incorporated.

4. Serve warm, topped with fresh fruit. Save extras in fridge. Enjoy!
