Peanut Butter Fiber Power Balls

Did you know know that the average American only consumes 14g of fiber each day? Did you also know that the minimum amount of fiber a human should consume daily is 20-25g? Do you fall into the 14g a day category? If so, these Power Balls are going to save your life. They are chalk-full of delicious fiber (7.5g in fact!) and will keep you satisfied all afternoon. 

 

These little peanut butter bombs are awesome. I almost can't keep them in sight... they are THAT good. When you make them, put them in the fridge- out of sight, out of mind. Bon appetite!

Ingredients:

2/3 cup natural peanut butter

1 1/2 tablespoons honey (or other syrup sweetener)

1 cup rolled oats

1/4 cup rice crispies (or brown puffed rice)

1/4 cup peanut butter chips

2 tablespoons flax seeds

1 1/2 tablespoons chia seeds

 

Recipe:

1. In a medium size bowl, melt peanut butter in microwave for 30-45 seconds. Remove and add in the rest of the ingredients. Mix until fully incorporated- should be stiff yet still sticky.

2. Roll into rounded tablespoon sized balls. Place on wax paper-lined sheet.

3. Place in refrigerator until hard. Keep in airtight container until gone!

 

Serves:

Makes 10 (2 per serving)
