What is better than peppermint ice cream? Um NOTHING. So that is why I created this recipe because when I'm trying to be my best self, ice cream doesn't fit into the picture, sadly. This shake is 100% natural and full of healthy, skin-glowing ingredients. I love the flavor and the texture! It's smooth and cooling...perfect for the warmer days ahead!

2/3 cup almond milk
1/2 cup kale
1/2 can full-fat coconut milk (freeze prior)
1-1/2 dates (pitted)
1/4 cup cashews (soaked)
1/2 teaspoon vanilla
3/4 teaspoon peppermint extract (this may vary depending on brand)
1/4 teaspoon salt
1/2 tablespoon cocoa nibs or dark chocolate chips (for decoration)
1. Freeze coconut milk overnight in freezer-safe container.
2. Place all ingradients, except cocoa nibs, in a blender. Blend on high until smooth and creamy. Add ice if desired. Enjoy!
