Lemon Chicken Stirfry

This is my favorite dinner that takes little to no time to whip up! Bursting with flavor, color and of course zest. What's not to love about that?! The zoodles add great texture while the lemon creates a refreshing taste. So, what are you waiting for? Let's get cooking!

1 medium zucchini 
1 chicken breast (cut into 1 inch cubes)
1 cup baby peppers (chopped), mushrooms, broccoli, etc.
1 lemon (juiced and zested)
1 Tablespoon avocado oil

1 teaspoon garlic

1/2 teaspoon Tajín seasoning 

1. Spiralize the zucchini (or buy pre-made zoodles) and set aside. Cut up the chicken and veggies.

2. Heat avocado oil in a pan at medium heat. Add in chicken and cook half way before adding the veggies. Turn up the heat and toss for 2-3 minutes. Add the lemon juice, zest and garlic. Flash cook zucchini. Mix well.

3. Remove from pan and add seasoning. Enjoy!
