1 medium zucchini
1 chicken breast (cut into 1 inch cubes)
1 cup baby peppers (chopped), mushrooms, broccoli, etc.
1 lemon (juiced and zested)
1 Tablespoon avocado oil
1 teaspoon garlic
1/2 teaspoon Tajín seasoning
1. Spiralize the zucchini (or buy pre-made zoodles) and set aside. Cut up the chicken and veggies.
2. Heat avocado oil in a pan at medium heat. Add in chicken and cook half way before adding the veggies. Turn up the heat and toss for 2-3 minutes. Add the lemon juice, zest and garlic. Flash cook zucchini. Mix well.
3. Remove from pan and add seasoning. Enjoy!
