Let's end the summer with a bang! This ceviche is light, refreshing and perfect for summer nights when you don't want to turn on the oven. Derived from my significant other's family recipe: I bring you the best shrimp ceviche you've ever had! Enjoy!

2 pounds cooked shrimp, detailed & deveined
1 large red onions, thinly sliced
4 ripe tomatoes, diced
10 limes, juiced
1 large orange, juiced
1 bunch of cilantro, chopped
1 cup tomato soup (or juice)
1 Tablespoon vinegar
1 Tablespoon sweetener (optional)
Salt (to taste)
Pepper (to taste)
Olive oil (light drizzle)
1. Start by cleaning shrimp and roughly chopping into bite-size pieces. Chop the vegetables accordingly.
2. Throw into a large mixing bowl. Add in the rest of the ingredients.
3. Toss and cover. Place in refrigerator until chilled and fully marinated.
4. Serve and enjoy!
