Scrumptious Spaghetti

It's that time of year where you just want to snuggle up with a big bowl of pasta and watch tv... Or is it just me? This recipe is my take on a classic and it's sure to be a crowd pleaser! The rich, chunky sauce and the delicate noodles (or should I say zoodles) are so SCRUMPTIOUS you won't even realize it's low cal. Plus it's super easy to whip up on a moment's notice. Enjoy!

Ingredients:

3-4 zucchini, spiraled (called zoodles)

1 pound organic ground beef, browned
1 jar of your favorite marinara sauce (make sure it's sugar-free!)

1 can of diced tomatoes with Italian seasonings

1-2 cloves of garlic
Salt (to taste)

Pepper (to taste) 

Olive oil (light drizzle)

Fresh parmesan (optional)

 

Recipe:

1. Spiralize zucchini with a spiralizer or buy pre-cut. Set aside.

2. Brown beef in a large pot. Once cooked, add in diced tomatoes, marinara sauce and garlic. Bring to a boil, turn down to simmer and set aside until zoodles are ready.

3. Drizzle a little olive oil in a pan at medium-high heat. Add in zucchini noodles and flash cook until lightly brown and soft.

4. Serve zoodles immediately, topping with meat sauce and cheese. Enjoy!

 

Serves:

6 (Makes for great leftovers!)
