Festive Pumpkin Soup

Cold days call for warm soup! I love to whip up this soup because it's healthy and easy! Creamy, savory and delicious! You can't go wrong with pumpkin!

2 Tablespoons Coconut Oil
1 medium Yellow Onion, chopped
2-3 cloves Garlic, Minced
1 teaspoon Salt
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/2 teaspoon Ground Ginger

1/4 teaspoon Cayenne 
1 15 ounce can Pumpkin Puree
2-3 cups Chicken Broth or Vegetable Broth

Salt and Pepper to taste

1/2 cup Coconut Cream or Heavy Whipping Cream



1. In a large pot, lightly brown the onion in coconut oil until translucent. Add in the garlic cook for one minute. Add in the remainder of the ingredients and set to simmer for 10 minutes.

2. Turn off the heat and let cool for a few minutes. Transfer the soup to a blender and blend until smooth. Be careful the soup will still be hot.

3. Transfer the soup from the blender back to the pot. Heat the soup and serve piping hot with a swirl of coconut cream on top! Enjoy!
