The ease of salads is completely underrated! I love to whip up a good, hearty salad because it's healthy and EASY! Full of lean protein, healthy fats and lots of crunch! You can't go wrong with a cobb salad.

For the salad:
1 lb. of uncooked shrimp, peeled and lightly tossed in olive oil
1 avocado, peeled and chopped
1 cup cherry tomatoes
4 hard boiled eggs, sliced in half
4 strips of locally sourced bacon (cooked in air fyer and crumbled)
1/4 cup sheep's cheese (I used feta but bleu or cheddar is good too)
Salad greens of your choice (I did butter lettuce, purple lettuce and romaine)
For the dressing:
2 tbsp fresh lemon juice
1 tsp dijon mustard
3 cloves garlic minced
1/8 tsp sea salt
1/8 tsp black pepper
1/4 cup avocado oil
1. Lightly toss shrimp with olive oil and sea salt. Turn air fryer to 375 and cook for 10-15 minutes until cooked through. Be sure not to over-cook. (Don't forget to cook bacon too!)
2. Place all of the dressing ingredients in a jar and shake until combined.
3. Arrange all of the salad ingredients in and bowl. Drizzle with dressing and place warm shrimp and bacon on top! Enjoy!
